What do you do when the first strawberries in the garden ripen?
You make these!
You’ll need:
1 cup flour
1 cup sugar
½ teaspoon baking soda
½ teaspoon baking powder
1 ⁄3 cup cocoa
Mix together in a bowl.
¼ cup oil
1 egg
½ teaspoon vanilla essence
½ cup black coffee
½ cup milk
Add to above and mix only enough to get rid of any lumps.
Pour batter into large muffin tins.
Bake at 180° for 20 25 minutes or until a skewer comes out clean.
When muffins have cooled cut in half and spread strawberry jam over the bottom halves. Pile whipped cream on top of the jam and top with cherries. Balance the muffin tops on and dust with icing sugar.
Serve.
